Colourful Coleslaw
VG, GF, SF, EF

Ingredients

Red CabbageRed cabbage, finely grated
Carrots, finely grated
Red pepper, finely grated
Green pepper, chopped
Green apple, coarsely grated
Raisins
Cheddar cheese, white, chopped into small pieces
Apple cider vinegar
Seasonings: celery seed, fresh ground black pepper,
-- fresh garlic, minced

Directions

All ingredients are to taste. Toss vegetables together, and add a splash of apple cider vinegar. Add raisins, mayonnaise and seasonings. Store in fridge until ready to serve. Add green apple and cheese just prior to serving.

"This coleslaw is something that I threw together one evening. I started with just the vegetables, vinegar, mayonnaise and pepper but felt that something was missing. The next day I added the rest of the ingredients. My husband was skeptical of this dish when he first saw it: a bright fuchsia salad with chunks of green. After tasting it he said it was very good and had a "nice combination of flavours". I added the apple and cheese just prior to serving to ensure the apple did not turn brown and the cheese did not get slimy. Expect the cheese to take on the fuchsia colour of the vegetable mixture.

This salad makes a nice side dish to any summer meal. It would also be a great dish to serve on the Christmas dinner table. Its bright colour would be quite festive, and ingredients such as apples, cabbage and raisins are good choices in the fall and winter."
