Sole is a lovely, delicately flavoured fish that usually needs a little zest. These three tasty ideas are easy to prepare and will add variety to your plate.
Dijon and Dill
GF, EF, SF
Blend 1/4 cup yoghurt or sour cream with 1/2 tsp. Dijon, 1/4 tsp.dried dill, & pinches of salt & pepper. Spoon
over baked or sauteed fillets.
Salsa and Wine
GF, DF, EF, SF
Pour 1/4 c.salsa & 2 tbsp. wine into frypan. Add Fillets. Simmer uncovered 7 min. turning once halfway through.
Dip fish in beated egg. Coat with 1/2 c.cornmeal mixed with 2 tbsp. Parmesan, 1/2 tsp.Italian seasoning, &
pinches of salt & pepper. Cook in 2 tsp. butter or olive oil over med. heat, 2 min .per side.
