Fish with Nut Crust
GF, DF, SF
This zesty recipe is a unique take on traditional battered fish. Great for those on a gluten-free diet.
2 tbs oil
2 whitefish, salmon, cod or halibut fillets
1 egg beaten (or egg white if diet conscious)
1/2 cup chopped hazelnuts (or other kind of nut)
2 tbs fresh parsley, chopped
1 lemon, zest & juice
Heat oil at medium temperature in fry pan. Dredge fish in egg and sprinkle with nuts. Place in pan and cook for 3 minutes on each side
until nuts are toasted, and fish is cooked. Serve with a squeeze of lemon and a sprinkle of zest & parsley on top.
Yield: 2 Servings
