Comfort Scones



1/3 cup grape seed oil or coconut oil, gently melted
3 tbs organic sugar, maple syrup or fresh honey
1 egg OR
-- * 1 tbs ground flax mixed with 3 tbs warm water
1/2 cup of stuff ~ i.e. currants, raisins, nuts,
-- cranberries or what have you
4 - 6 tbs alternative milk of choice (almond or rice)
2 1/2 tsp baking powder
1/2 tsp sea salt
3/4 cup flour (see note)


Mix wet ingredients; add dry ingredients to wet ( baking powder last). Mix till just combined. Generously spoon onto lightly grape seed oiled double cookie sheet or use enviro-parchment paper and bake 12-15 min.

I had a little trouble reading the flour amount for this recipe, and unfortunately Yesim is traveling and I am not able to contact her. The amount is either 3/4 cup or 1 3/4 cup. I would suggest starting with 3/4 cup and adding more if the mixture seems too runny. Sorry for the inconvenience!
