Book Review:  Bread Machine Baking for Better Health
Authors: Maureen B. Keane and Daniella Chace

For anyone on any kind of restricted diet this book is loaded with special bread recipes.  In addition to its selection of basic bread recipes, it contains ones that are  wheat free; gluten free; high fiber; high protein; lactose free; low sodium; low fat/cholesterol/egg free; and milk free. Included also, are chapters on bread basics, and bread as part of a healthy diet.

If you don't like making bread from scratch and are on a special diet you may be saved a lot of work by following these recipes in your machine.

On the down side, if you choose to make low gluten or gluten free breads, the type of machine you have may affect your results. According to the authors, the 100% gluten free recipes are best made in a one pound loaf machine.

My personal machine is an upright model and makes a two pound loaf. I have found that even when making basic wheat bread I have to use a special high gluten flour to get the dough to rise sufficiently.  The low gluten recipes in this book, therefore, did not turn out well. Those with the "sideways-style" one-pound machines may have better luck, though I cannot speak with experience as I have never used one of those models. I believe that when the loaf is sideways instead of upright it will rise easier.

For those with upright models who want to make low gluten or gluten free recipes, another option would be to put the machine on the "dough" setting. If you have made bread from scratch and are experienced at getting the right temperature and baking time for low gluten and gluten free breads, you can take the dough and bake it in whatever size loaf pan you want in a conventional oven. While this will be more work than simply putting in the ingredients and pressing a button, the machine will still save you time and do all the hard work of mixing and  kneading.

I plan to purchase a new "sideways-style" bread machine at some point in the future. Until I do, I can use the bread machine I have to make basic bread for my S.O.   I also plan to experiment with the dough setting/conventional oven method for the wheat free bread recipes in this book (I'll keep you posted).
